Overview

An immersive, hands-on workshop exploring the art of Pet Nat (Pétillant Naturel) making. Participants will learn the fundamentals of natural sparkling fermentation and craft their own unique col fondo–style Pet Nat. Each guest will choose between a wine-based or non-alcoholic version using water kefir as the base for the secondary ferment.

Workshop Highlights

Introduction to Pet Nat & Col Fondo:
A guided talk on the origins, techniques, and natural fermentation principles behind Pet Nat and col fondo wines.
Fermentation Fundamentals:
Learn about yeast activity, sugar levels, and bottle conditioning for natural carbonation.
Blending Session:
Each participant will create a personalized blend using a selection of base wines or water kefir infusions. Options may include:
- White or rosé base wines from Numbers Winery
- Water kefir bases infused with botanicals, fruits, or herbs
- Natural flavour additions such as citrus zest, elderflower, or seasonal berries
Bottling & Sealing:
Guests will bottle their own Pet Nat or kefir-based sparkling beverage, learning the technique of crown capping and labeling.
Aging & Enjoyment:
Discussion on bottle aging, sediment management, and serving tips for col fondo–style drinks.
